Light Creamy Spinach Dip

Ingredients

2 tablespoons high heat oil 1/4 cup shallots, chopped 4 scallions, chopped 2 large cloves of minced garlic 12 ounces spinach leaves 1/2 teaspoon fresh lemon zest 2 teaspoons fresh lemon juice 1 cup Greek/ natural yogurt 1/2 cup finely crumbled feta cheese (optional) 2 tablespoons chopped fresh dill Freshly ground black pepper & sea salt to taste

Method

Rinse the spinach well, remove any woody stems that may make it stringy and tear into bite-size pieces. Heat oil in a large pan over medium heat. Add shallots, onions, and garlic and sauté, stirring often, until fragrant, about 1 minute. Add spinach and cook, stirring often, until wilted, about 2 minutes. Allow the mixture to cool slightly and then add to a food processor. Roughly purée, about 5 pulses. Add remaining ingredients and pulse briefly just to combine. Season with sea salt and pepper.
